By day 3 of Spring Break we made dinner a few times in our flat at Evermore Resort… because eating at restaurants with kids on vacation gets boring and expensive.
So I ordered groceries and figured this would be a great time to redeem myself and attempt to make enchiladas again now that I know what I’m doing right? Eh, not so much! I forgot an ingredient and they came out too soggy bc I over poured the sauce. I wish this reel was an Enchilada recipe but, once again, I have no recipe to share with you. (Maybe third time will be the charm???)
Turns out, this tray of so-not-perfect enchiladas was their favorite meal of the trip – pool hair, iPads, and a mom who doesn’t know how to use a manual can opener. I’ll take it!
